Chinese is something that won’t be global for FiveM. Because English is really the most common language in the world.
Also most releases are in English. So best thing you can do is edit your scripts to be Chinese.
FiveM itself does not have any multi-language support, however GTA V should support both Traditional Chinese as well as Simplified Chinese since recent updates. Have you tried changing the language of your base GTA V?

I know, but there is no simplified Chinese option in the fivem game settings.
For example, users who use traditional Chinese to enter simplified Chinese servers will have some mistakes.

Ah, indeed! It seems that, because that option was added in an update, and the language option in GTA V was usually unused, this hadn’t been added.
