Did you try to disable/uninstall your Anti-virus? Yes

Also add what you already tried so far.

Updating my drivers to the latest version
Updated windows to the latest version
Reinstalled GTA
Reinstalled FiveM

It does work with one screen only but there are other people using 2 screens so not sure why it would break with mine?
