Did you try to disable/uninstall your Anti-virus? - no

Also add what you already tried so far. -
Deleting fivem reinstalling, clearing cache multiple times including .xml

it was working perfectly fine this morning but around early afternoon my game would freeze and fully close when I tried changing the license plate on my car or tried saving it with the lambda menu, when I used SimpleTrainer to change my plate it was fine

I would ask in the lambda menu topic as FiveM did not design the mod.
