GTA V currently takes up 73 gigabytes! I was thinking of deleting it but I wondered if FiveM completely needs all of GTA V. I know it probably needs the engine and some other vital components, but can I at least remove some GTA V folders/files? I never play GTA V anymore, but I always use FiveM. Legit copy btw.

you absolutely need it. FiveM is basically a mod. It’s just a different way to run GTA V.
