Closed Steam, which worked.

So, the problem was, despite registering my Social Club account, when I launched FiveM it showed the Steam Overlay (despite it not being a Steam game) and then showed my Steam username as my username.
Closing Steam caused it to work fine, but does this mean I will have to, annoyingly, close Steam every time?
